The Amaral brothers keep customers coming back to Carlos Brazilian International Cuisine with authentic Brazilian flavors and a scenic overlook of Roanoke.

SINCE MOVING TO America, Carlos and Ricardo Amaral have come a long way in the restaurant business. Both worked their way up to become chefs, working in restaurants in New York, Montreal and Vermont. They now have more than 60 years of experience between them. So working together to open Carlos Brazilian International Cuisine in 1990 was a natural step.

“The restaurant business is in our genes,” says Ricardo. “We want our customers to remember that we are a family restaurant.”

Ricardo’s wife, Maggie, says their goal is for diners to feel at home without being at home. The chefs use the freshest ingredients and all dishes are made to order, creating comfort food – Brazilian style. Ricardo and Maggie’s son, Bobby, is the pastry chef, and makes all of his desserts from scratch.
