Red Velvet Cake Recipe

Ingredients

  • 2 cups sugar
  • 1 stick margarine
  • 1 cup buttermilk
  • 1 cup oil
  • 4 eggs
  • 2 oz. Red food coloring
  • 2 heaping tablespoons cocoa
  • 3 cups flour
  • 2 teaspoons vanilla
  • 1 teaspoon soda
  • 1 teaspoon vinegar
  • dash salt

The Frosting:

  • 3 tbsp. Flour
  • ½ tsp. Salt
  • 1 cup milk
  • 1 cup margarine
  • 2 tsp. Vanilla
  • shredded coconut

Cream Cheese Icing:

  • 1 8 oz. Pkg. Cream cheese
  • 1 box confectioners sugar
  • 2 tsp. Vanilla
  • 1 stick margarine.

Instructions

Cream sugar, margarine, oil, eggs and blend. Make a paste with food coloring & cocoa, add to mixture. Alternately add flour, salt, buttermilk & vanilla. Mix soda and vinegar in small bowl & ad to batter. Bake in two 8” greased & floured pans for 30 min. at 350 degrees, or in a large sheet cake pan. Frost with Cream Cheese or the Red Velvet Frostings.

The Frosting:

Blend flour, salt, milk and simmer until thick, stirring constantly. Let cool. Cream margarine, sugar, vanilla and mix well with above.

Cream Cheese Icing:

Mix all ingredients together and blend well.

“Quite a few years back, I had a good friend who loved this cake, but I never could find a good recipe for one that came out good. I took 3 or 4 recipes and tried several ways before I came up with this one. It also does great in a sheet pan. Makes a large cake, and always very moist.”
