The Quillen tailgate,is one to visit on game day. With a TV broadcasting pregame shows and not one but two gigantic grills-what more could you want? (Recipe courtesy of “A Taste of Virginia Tech“)

Serves 4-6

  • 12 jalapeno peppers
  • 8 ounces cream cheese, softened slightly
  • 8 slices cooked bacon, chopped
  • 4 pounds raw pork sausage

Slice each jalapeno in half, lengthwise, keeping stems intact. 

Remove the seeds and discard and fill one side of each pepper half with 1 tablespoon cream cheese placing  a piece of cooked bacon on top of the cream cheese

Ball sausage around the whole stuffed pepper, leaving the stem out on one end. Grill or fry in a hot skillet with oil until the outer layer of sausage is browned and cooked through

**Cooks Note: This makes 24 very large tails. If that seems like too much for your crowd the recipe can easily be cut in half- but, when is too much tail ever a bad thing?
