Pinterest has been blowing up with red-, white- and blue-themed desserts for the Fourth of July holiday. From trifles and cookies to flag cake and Jello, you name it, it’s there. But I decided to come up with something of my own.
I didn’t go all out and make anything from scratch, but you certainly could with this recipe if you wanted. Time was just not on my side this go-round. So, armed with boxed brownie mix and a can of cream cheese frosting, I created my Festive Brownie Bites. I even added a little red food coloring to the brownie batter for an extra pop of American spirit. Blueberries and strawberries on top completed the festive décor.

Festive Brownie Bites
- 1 box brownie mix
- 1 egg
- ¼ cup water
- ½ cup oil
- 2 Tbl. red food coloring
- 1 container cream cheese frosting
- blueberries and strawberries for garnish.
Preheat oven to 325 degrees (for dark or nonstick pans). Follow the directions for the brownie mix, then add red food coloring. Stir to combine.
Spray a mini muffin tin and spoon batter into each hole. Bake for 15-20 minutes.
Allow brownies to cool completely. Top each brownie with a teaspoon or so of frosting. Then top with blueberries and strawberries.
