Ingredients
- 2 Cups Sugar
- 2 Cups Flour
- 2 teaspoons baking powder
- A pinch of salt
- 2 teaspoons cinnamon
Filling/Glaze Sauce:
- 1 cup sugar
- 2 tblsp. White Karo syrup
- ½ cup buttermilk
- 1 teaspoon soda
Cream Cheese Icing:
- 1 8-oz. Pkg. Cream cheese
- 1 stick butter
- 1 box powdered sugar
- 1 tsp. Vanilla
Instructions
- Mix well and pour 1½ cups Wesson oil, 4 eggs, 1 teaspoon vanilla or combine w/walnut flavoring, 3 cups finely grated carrots, 1 cup chopped nuts (walnuts or black walnuts). Bake 1 to 1½ hrs. @ 350 degrees. Cream cheese icing can be used or the filling/glaze sauce. (Cook filling until foams for about 5 min. Pour over hot cake.) Mix all ingredients together and frost cooled cake. Can use flaked coconut and pecans in icing if desired.
