Homemade Carrot Cake Recipe

Ingredients

  • 2 Cups Sugar
  • 2 Cups Flour
  • 2 teaspoons baking powder
  • A pinch of salt
  • 2 teaspoons cinnamon

Filling/Glaze Sauce:

  • 1 cup sugar
  • 2 tblsp. White Karo syrup
  • ½ cup buttermilk
  • 1 teaspoon soda

Cream Cheese Icing:

  • 1 8-oz. Pkg. Cream cheese
  • 1 stick butter
  • 1 box powdered sugar
  • 1 tsp. Vanilla

Instructions

  1. Mix well and pour 1½ cups Wesson oil, 4 eggs, 1 teaspoon vanilla or combine w/walnut flavoring, 3 cups finely grated carrots, 1 cup chopped nuts (walnuts or black walnuts). Bake 1 to 1½ hrs. @ 350 degrees. Cream cheese icing can be used or the filling/glaze sauce. (Cook filling until foams for about 5 min. Pour over hot cake.) Mix all ingredients together and frost cooled cake. Can use flaked coconut and pecans in icing if desired.
