The Lazy Baker: Quick Chocolate Peanut Butter Fudge

Confession time: I’ve never made fudge before. Based on the recipe my mother-in-law uses, I was worried it’d be too complicated for me. The last thing anyone wants is burnt fudge! But on a lazy Sunday afternoon, when I saw an easy recipe containing ingredients I had on hand in the kitchen, I thought I’d give it a try.

I will say that I’ll be better prepared next time – for instance, keeping my peanut butter on the ready and nearby for when I pull the mixture off the heat to immediately pop in, rather than having to spend time digging it out and risk missing that window when it gets nice and melty. It’s also important for the constant stirring while it’s on the stove.

All in all, however, it turned out pretty darn tasty! My husband is certainly happy about the sweet treats and asked if I’d make some for Christmas for his fellow teachers. So basically, if any of my friends and family are reading this…you already know what you’ll be getting for Christmas! (I doubt I get any complaints!)

Ingredients:

  • 2 cups sugar
  • 1/4 cup cocoa
  • 1/2 cup milk
  • 4 teaspoons butter
  • 1/8 teaspoon salt
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla extract

Combine sugar, cocoa, milk, salt, and butter into medium pot. Cook on medium-high heat, stirring constantly until it comes to a rolling boil. Once mixture reaches rolling boil, keep on for one minute.

Remove from heat and add peanut butter and vanilla extract. Beat with spoon until begins to thicken. Pour in greased pan (I used 8×8) and place in fridge to cool and solidify.
