Lazy Baker: Birthday Rice Krispy Treats

I had two goals this weekend: make a new Lazy Baker recipe and attend my 7 year old nephew’s birthday party. As you can imagine, it was a pretty easy decision when I stumbled across a neat Pinterest recipe and realized I could knock out two birds with one stone – or in my case, a kid’s tastebuds with several sprinkles.

Ingredients:

  • 5 Cups Rice Krispy cereal
  • 1/3 cup cake mix (the actual powder mix, not as a batter!)
  • 1 bag (10 oz) of mini marshmallows
  • 1 container sprinkles
  • 1/3 tblspn butter

So here’s the break down: Setting your stove on low heat, toss your butter in a large saucepan (I used a big pot to prevent a big mess!) and let that simmer for a moment. Next up, put the entire bag of marshmallows in there and let them melt a little, stirring to make sure it’s even.

Then comes the important part. When adding your dry cake mix to the marshmallow fluff, make sure to add it a spoonful at a time. Once it’s all been folded in, you can slowly mix in your rice krispies. Use about half of your container of sprinkles as you mix it all up to give it some color.

Finally, scoop that all out into a container – pan, tupperware, your call – and flatten down. Use the remainder of your sprinkles for the top as decoration. I recommend letting the rice krispies cool down for an hour or two before cutting them up, but of course that’s totally up to you!

The end result? A colorful, easy, sweet treat that kids and adults alike will love (I had proof at the birthday party!) without breaking the bank or taking up an entire afternoon. How fun!
