The Wannabe Chef: Fall on a Plate

Yes, I dread the end of summer every year. But once fall arrives, I embrace the changing colors, cooler air and of course the yummy treats. This past weekend’s cooler temperatures got me excited about fall. So much so, that I had a craving for pumpkin goodness.

Instead of the traditional pie, I went a different route with pumpkin spice cookies. This recipe, adapted from one I found on Pinterest, was so easy and the flavor was divine. Just four ingredients created one heck of a cookie. They aren’t pretty to look at, but the taste makes up for the appearance.

Pumpkin Spice Cookies

  • 1 box spice cake mix
  • 1 15 oz. can pumpkin
  • 1 cup chocolate chips (I used dark chocolate)
  • ½ cup chopped pecans (or the nut of your choice)
  • brown sugar (optional for sprinkling on top)

Preheat oven to 350 degrees. Combine spice cake mix and pumpkin. Fold in chocolate chips and pecans.

Use a teaspoon or tablespoon (depending on how large you want the cookies) to scoop the batter and drop on cookie sheet. Sprinkle top of each cookie with brown sugar if desired. Bake for 8-10 minutes.
